Get the eggs boiled and then cooled and peeled. Use a saucepan over low heat to cook 4 tbsp. Coffee balsamic vinegar and 2 tbsp. maple syrup until 6 to 8 minutes. Add 1 tsp. lemon juice and stir it thoroughly. Place 4 cups mesclun and two slices prosciutto on a plate. Cut the half-boiled eggs in two pieces and place it over them. Season the salads of your choice with salt and pepper, and drizzle with coffee-balsamic-vinegar syrup. The breakfast salad is ready.
