Pasta Primavera with Lemon Infused Olive Oil Recipe

Ingredients you will be needed:

*Water- 4Quarts
*Salt / sea salt- 2 Tablespoon
* Penne pasta- 1 Lb.
* Broccoli florets, precooked- 2 Cups
* Broccoli and Carrot- One carrot cut into inch sticks and pre-cooked
*Extra virgin Olive oil- 4 tablespoon
*Onion- one small chopped Onion
*Garlic- one tablespoon minced garlic
*Peas-1/2 Cup frozen green peas
*Corn-1/2 Cup Sweet corn
*Basil- one teaspoon fresh chopped basil
*Black pepper
*Grated Parmesan cheese

Preparation

Bring 4 quarts of water and add two tablespoons salt to it and to boil dry penne pasta to the desired doneness. Meanwhile, precook broccoli florets and carrots. Once cooked- transfer vegetables to ice water to keep t natural color. , heat the olive oil for 1 minute in a large, heavy skillet until the onion and garlic become light golden. Add the vegetables to it until it is soft. Add the drained pasta and basil and season the salt to taste. Toss well to mix and serve immediately with some freshly grated Parmesan.

Garlic Olive Oil Shrimp Scampi Pasta Recipe

 Ingredients you will need

*shrimp- 1 lb. frozen large peeled shrimp
*salt -Three Tea Spoon
* Onion- 1 Medium-sized onion
* garlic -7 Garlic cloves
* Lemon- 2 medium-size lemons
* Parsley- 1 cup pre-steamed parsley
* Bread crum- ¾ cup breadcrumbs
* Extra-virgin olive oil- 6 Tbsp. extra-virgin olive oil, plus more for drizzling
* Unsalted butter- 8 Tbsp. unsalted butter
* Pepper- ½ tsp. red pepper flakes
* White wine- ¾ cup dry white wine
* Pasta – 1 lb. fettuccine

Preparation

This dish can be prepared quite quickly, so you’re going to want to have all of your prep done before you start cooking. Defrost 1-lb. Shrimp for 15 minutes and make sure to pat them dry before proceeding. Season the shrimp with 1 tsp. Salt and bring a large pot of salted water to a boil. Put finely chopped onion, 5 cloves grated garlic, finely grate 1/2 lemon zest, 1 cup tender steam parsley leaves to a separate small bowl, and set aside. Heat ¾ cup panko in 2 tablespoon olive oil and ¼ teaspoon salt in a large pan oven over medium heat, stirring to coat panko and make it golden brown. Heat 2 Tbsp. Olive oil in the pot to cook shrimp, undisturbed, until golden brown. Discard the tails of shrimp then cut it into three pieces.

Add onion mixture, four tablespoon butter, one teaspoon salt, and ½ tsp. Red pepper flakes to it and cook over medium-low heat, frequently stirring, until very fragrant and softened but not browned. Drop 1 lb. Fettuccine in boiling water as per directions. Scoop out 1½ cups pasta cooking liquid. Drain the pasta and add it into the pan along with reserved pasta cooking liquid and the remaining four tablespoon butter and two tablespoons of olive oil. Cook it on medium heat until it is well coated and glossy. Remove pan from heat and mix the shrimp with pre-steamed parsley. Squeeze lemon juice into the pot. Taste and adjust seasoning for salt. Divide pasta among bowls. Drizzle with more olive oil. Serve as hot!
